Sausage and Egg Crescent Roll Breakfast Pizza

This concept has been circulating the internet for years. So, no. These breakfast pizza rolls aren’t a ground breaking recipe…but boy do they hit. Perfect for a quick morning meal. Great when you feel like breakfast for dinner. And the absolute jam as a late night snack. These bad boys are flaky and buttery and savory in all the ways that matter.

Easily switch up your meat or substitute with veggies, change your cheese, and have fun with those herbs. Countless breakfast pizza options await, and I’ll be sure to drop a few suggestions down below!

Breakfast Pizza with Crescent Rolls

These bad boys are flaky and buttery and savory in all the ways that matter. Customizable crowd pleasers!

Ingredients

  • 1 tube 1 Crescent rolls, I use Original Pillsbury

  • 4 4 Eggs

  • 4 4 Breakfast sausage links, precooked

  • Handful Cheddar cheese

  • Handful Freshly grade Parmesan

  • S+P+Red Pepper Flakes to taste

  • Optional Fresh herb of choice such as parsley, chive, basil

Directions

  • Preheat oven as directed on crescent roll package. Line your baking sheet with parchment or a baking mat.
  • Carefully unfold the contents, dividing into 4 separate rectangles. This looks like 2 triangles a piece.
  • If there are any holes or breaks, pinch the dough back together, then fold up the ends and the sides pinching up to make a wall. It won’t look perfect by a long shot. But this will help the egg stay in place once added.
  • Take your slice of cheddar (or shredded cheddar) and place a thin layer on top of each rectangle.
  • Next, crack your egg on top, times 4. Top with sliced sausage. Season with S+P+Red Pepper Flakes. Pop into hot over for 15 minutes and check (this should yield you a firm yet soft yolk), cooking longer as needed for personal preference. 
  • Remove from oven, grate fresh Parm, and sprinkle herb of choice all over.

Notes

  • Alternatively, you can opt to keep the entire crescent roll sheet as one unit, smoothing out any holes or creases… assemble and cook exactly the same way.
  • There will be egg white spillage depending on how large your eggs are. Nothing to be alarmed about! When this happens I just use a bit of paper towel to help put things back in place and then let it be. It will still taste just as good! 
  • Instead of sausage you can opt for cooked bacon or fresh mushrooms.
  • While I enjoy the play of using both cheddar and Parmesan, you can certainly feel free to use whatever cheese you have on hand that you love. Instead of grating fresh Parm on at the end, simply grate a little more cheddar and call it a day!

Breakfast Pizza Feeds a Crowd

While these can be made in advance and reheated on the fly, they really do make for a fabulous weekend brunch for a bunch. Really. These mini breakfast pizza rolls are a crowd pleaser AND easy to pump out. I’m pretty sure we’re all looking for one more simple but delicious recipe to tuck up our sleeve.

For a low key affair, simply keep the breakfast pizza rolls stacked on a sheet pan and place in the middle of your table. Add a bowl of fresh fruit, a pitcher of orange juice, bottle of bubbly, and a French press or pot of Spiced Hot Chocolate… who wouldn’t love you? The answer is no one. Because everyone will!
