If I was forced to pick 2 knives for the rest of my life. This is one of those 2. While I LOVE my chefs knife, this girl makes sliding through slices a breeze. It fits perfectly in my hand. Is well balanced. Even after years of daily use, I'd still pick her every single time.

Now this was a knife I laughed at. At first. And then I started using it. And then I fell in love. Easily in my top 4 go to knives on a daily basis. Just the right size for quick minces and dices, for garlic and green onion. Lightweight with stellar slicing and rocking abilities. I can't imagine whipping my way around the kitchen without her. Think pairing knife meets utility knife. BOOM.

To be honest. I went years without really using a pairing knife in the kitchen. I mean. I owned it, just never grabbed for it. Until my skills started leveling up and I started getting quicker. I had been so intimidated hulling strawberries and tomatoes with this little thing... until I practiced. And now, it's the knife I grab whenever I have a small quick job to buzz through! Point is. Don't write something off just because it's hard or you don't think you'll like it. Cooking is like everything else in life. The more you do it, the easier it gets!

I was gifted this knife by a Wüsthof rep during my time working at a kitchen boutique in Little Rock. I had been eyeing it for some time and was THRILLED to finally add her to my collection. I can't tell you how many times a week I reach for this thing. Whether I'm slicing steak, chicken breasts, a loaf of sourdough, or shaving lemons paper thin for baked fish. She hasn't even needed to be sharpened yet... 4 plus years later.
